Duck A L’Orange

Ingredients

Duck Breast:

1 duck breast

Salt and Pepper

150 ml CORE Orange Juice

1 tablespoon of honey

1 sprig of thyme

Salt and Pepper

Method

Score skin,

Put breast skin side down into a cold pan on medium heat 8 mins until skin crispy.

Turn over and cook for 2 mins.

Rest duck breast.

Add 150 ml CORE Orange uice to pan with duck fat, salt and pepper, 2 teaspoons of honey, heat to simmer, add sprig of thyme whisk and reduce.

When duck rested 15-20 mins slice,  and pour over sauce.
